Traveling to Mai Chau, visitors must definitely try these famous dishes: Com Lam, Sticky rice, grilled wild boar skewers, bitter bamboo, stir-fried bees with sour bamboo shoot, hill chicken, Mai Ha wine, grilled stream fish, etc.

Grilled wild boar skewers

Grilled wild boar skewers are a famous specialty of Mai Chau. Coming to Mai Chau, visitors will immediately see numerous rows of hot grilled skewers on the way to the village with wonderful smell that make your mouth water and craving for some. This is wild boar meat. After slaughtering and roasting, the meat will be cut into small pieces and marinated with ginger, lemongrass, garlic, galangal, and Vietnamese curry. Next, the meat will be rested for about 30 minutes, packed into the skewers and grilled on a charcoal stove, to make the meat more juicy and delicious.

Sticky rice

Sticky rice is one of Mai Chau’s specialties and an indispensable dish on Thai people’s special occasions. This special “nuong” rice is grown on terraced fields right in the middle of the valley. So the rice is more soft and fragrant than the ordinary glutinous rice. The sticky rice is made from delicious upland rice, combined with other natural ingredients such as baby jackfruit, green rice and green beans, etc. to create different colors and make it tastier and more eye-catching.

Com lam (Vietnamese sticky rice in bamboo)

Com Lam is another specialty dish of Mai Chau. The secret to create this attractive dish is the soft and fragrant upland rice. The rice is soaked overnight, mixed with grated coconut and packed tightly into the bamboo tube to make the rice whole when it is cooked. When putting the rice into the tube, people will add a little coconut milk, then wrap the tube with sugar cane or banana leaves, and burn it on fire for about 2 hours until it smells pleasant.

Stir-fried bees with bamboo shoots is a dish that is usually eaten in the late summer. People here take young bees in the beehives and bamboo shoots from the forest. These two ingredients are stir-fried together and mixed with a bit of spicy chilli to create a delicious, sour and spicy dish that is hard to resist.
